Here is the recipe for a new food called Asian marinated deer having Brussel sprouts,mushrooms and chestnuts:
Ingredients
- Light soy sauce: 4 TBSP
- Honey: 2 TBSP
- Lime juice: 2 TBSP
- Roasted sesame oil: 1 TBSP
- finely chopped two garlic cloves
Side dish
- Brussel sprouts: 300g
- Wild mushrooms: 300g
- Pre-cooked chestnuts: 170g
- Fresh chillies: 2
- Oil: 3 TBSP
- Light soy sauce:3 TBSP
- Oyster sauce: 2 TBSP
- Roasted sesame oil:1 TBSP
- Palm sugar: 1 TBSP
- Cooking rice
- Mirin wine: 1 TSP
- Rice vinegar: 1 TSP
Directions
- In a certain zip lock bag, combine all of the marinade ingredients and marinade also the deer tenderloins for around 2 hours.
- Heat the Kamado Joe half directly and half indirectly.
- In a cast iron skillet, drizzle the oil and roast the Brussel sprouts, mushrooms, and chestnuts in the same order over direct fire.
- Stir in the remaining ingredients for the side dish, the chilies, season to taste, and set the pan aside under low heat.
- Drain the deer tenderloins well to cook them on the cast iron griddle/grill grates over high direct fire.
- Put the deer tenderloins aside over direct fire when they display good roasting flavours and leave them there until they will reach the appropriate internal temperature.
- Allow the tenderloins to rest for a few minutes on the cutting board, serve with a side dish, and enjoy an Asian-inspired Christmas supper!
